A fun fact: The charming name of this village, surrounded by lush hills where the finest Champagne grapes grow, is pronounced ‘Aie-hi’.
The history of Aÿ dates back long before the creation of Champagne itself. Its wines were famously adored by Henri IV, who praised their exceptional lightness compared to Burgundy wines. In fact, his doctors recommended Aÿ’s wines for their unique qualities. Henri IV is even quoted as saying: “If I were not King of France, I would want to be Prince of Aÿ.”




Every two years, on the first weekend in July, Aÿ hosts the “Henry IV Festivities,” a lively celebration featuring a variety of activities, with local winegrowers opening their doors to the public.

I always recommend that visitors take the time to explore both the renowned champagne houses and the smaller, independent winegrowers to experience the art of champagne making from a variety of perspectives. Here are just a few suggestions for visits and tastings, among many others:
Notable Champagne Houses to Visit in Aÿ
- Champagne Ayala: One of the first champagne houses to produce with low sugar content, Ayala is also among the oldest in the region. For over 150 years, these “Champagne craftsmen” have been creating exceptional champagnes, known for their purity and elegance—especially in their signature Chardonnay-based cuvées.
- Champagne Bollinger: Founded in 1829, Bollinger is renowned for producing some of the most prestigious champagnes in the world, even serving as the official supplier to the British Crown. Famous for its commitment to perfection, Bollinger uses oak barrel fermentation and extended ageing to create complex blends with a remarkable range of aromas. The house even offers a special James Bond 007 edition cuvée!
- Champagne Billecart-Salmon: A family-run house in Mareuil-sur-Aÿ since the 19th century, Billecart-Salmon produces world-class champagne across its 100+ hectare estate. Known for its dedication to craftsmanship, quality, and balance, the house has gained international acclaim, particularly for its exquisite Rosé cuvée.
Independent Winegrowers of Aÿ-Champagne
- Champagne Pierre Leboeuf: This is definitely my personal favorite! A visit to this family-owned winery is not only a journey through history (their house is the former wine press of King Henri IV!), but also an opportunity to meet passionate family members who will share countless fascinating stories about their champagne house.
- Champagne P.M. Roger: A winegrower-owner and harvester-manipulator since 1874, this family-run estate allows you to discover a variety of champagne qualities and vintages, all produced from grapes grown in the prestigious Aÿ vineyards. For me, this is the best value for money in Aÿ!
- Champagne Egrot et Filles: This small 6-hectare estate, classified as both Grand Cru and Premier Cru, offers a unique experience. The winery, which harvests and handles its own champagne, features exceptional cellars carved into the chalk, some dating back to the 18th century!

In Aÿ, the Pressoria Museum, set in a former wine press, offers a unique and interactive way to explore the champagne-making process through all five senses. Learn about the distinct characteristics of the Champagne region and enjoy a glass of champagne during the experience.

- L’Avarum : A cozy spot just a short walk from our gîtes, L’Avarum offers inventive cuisine made with fresh, local produce. The restaurant also boasts an excellent wine list showcasing the best vintages from the Champagne region.
- Le 19cent60 : A small, intimate brasserie with just 20 seats, Le 19cent60 serves simple, home-cooked meals with a focus on quality, all within a warm and welcoming atmosphere.

- La Frigousse : A charming champagne bar offering an extensive and carefully curated wine list. It also features a selection of local products, including biscuits, terrines, oils, spirits, and more.
- La boulangerie Baillet et son atelier : A renowned bakery and patisserie where all products are made from scratch using high-quality local ingredients. On one side, you’ll find freshly baked bread and pastries, while on the other, the workshop offers teas, chocolates, macarons, and homemade ice cream.

Often referred to as the capital of Champagne, Épernay is a destination not to be missed. At the heart of the town lies the renowned “Avenue de Champagne,” lined with prestigious Champagne houses, including Moët & Chandon, and offering access to 28 kilometers of underground cellars. The avenue is also home to elegant mansions and châteaux, along with the fascinating Champagne Wine Museum. Beyond its sparkling heritage, Épernay boasts a picturesque historic town center, perfect for leisurely strolls and enjoying the lively terraces, especially in the summer months.

- Moët & Chandon: Established in 1743, Moët & Chandon is arguably Épernay’s most iconic Champagne house, featuring 28 kilometers of cellars, the largest in the region.

- By car: 5 minutes.
- By taxi: 5 minutes.
- By bus: Take line 10 just a few steps from the apartment, which runs every 30 minutes and goes directly to Épernay. Tickets are available from the driver.
- By bike: 15 minutes.
Hautvillers: The Birthplace of Champagne



Hautvillers is one of the most picturesque villages in the region, renowned as the birthplace of Champagne. It was here, in the 17th century, that Dom Pérignon famously set out to create “the best wine in the world.” As a monk at Hautvillers Abbey, he pioneered innovative techniques that revolutionized winemaking and played a key role in the development of Champagne vineyards. Today, Dom Pérignon Champagne is not only the most iconic but also one of the priciest Champagnes in the world!

- Champagne Marion-Bosser: A family-owned estate revived in 1994, Champagne Marion-Bosser cultivates Chardonnay, Pinot Noir, and Pinot Meunier on a Premier Cru terroir. Visitors are warmly welcomed and can explore the history of the house and its diverse Champagne offerings.
- Champagne Joseph Desruets: Committed to preserving their heritage and traditions, this small family-run winery still uses a historic wooden press, dating back to 1888, making it the oldest operational press in the Champagne region.

- By bike: 30 minutes. The scenic cycle route follows the water’s edge directly to Hautvillers. For the uphill climb to this charming hilltop village, an electric bike is recommended.
